Stuffed Shells with Cottage Cheese

Jumbo Pasta Shells
2 cups Cottage Cheese
8 ounces shredded Mozzarella cheese
1/4 cup grated Parmesan cheese
1 egg, lightly beaten
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 tablespoon minced fresh oregano
1 tablespoon minced fresh parsley
1/4 teaspoon ground nutmeg
1 28 ounce jar pasta sauce

Preheat the oven to 350 degrees. Prepare the shells according to the package directions; drain. Meanwhile, combine the cheeses, egg and spices in a medium bowl. Spread half of the pasta sauce on the bottom of a 13x9 inch baking dish. Spoon the cheese mixture into the cooked shells. Arrange the shells snugly in the baking dish. Cover with foil that has been sprayed with cooking spray, sprayed side down. Bake the shells for 35 to 45 minutes or until the filling is set. Garnish with additional fresh chopped parsley if desired. Serve with remaining warmed pasta sauce.

Open-Face Fruit & Cheese Omelet

1 teaspoon grated orange peel
1/2 cup Cottage Cheese
2 eggs
1 tablespoon orange juice
1 teaspoon powdered sugar
1 tablespoon butter
1/4 cup fresh raspberries

In a small microwavable bowl, stir the orange peel into the cottage cheese. Microwave on high for 30 seconds or until the mixture is slightly warm. In a medium bowl, whisk or beat the eggs, orange juice and powdered sugar. Melt the butter in 8-inch nonstick sauté pan over medium-high heat. Pour in the egg mixture. Cook until omelet is cooked on both sides, and slide onto a plate. Spoon the warm cottage cheese over omelet and top with berries.
