Roasted Poblano Corn Chowder

18 oz. water
13.5 oz. daricream
7 oz. corn
4 oz. roasted red peppers:
2.5 oz. bacon - small dice
1 oz. roasted chopped garlic
1 oz. roasted diced poblano peppers
1 oz. chicken base
0.8 oz. starch - modified
1 1/2 teaspoons salt
3/4 teaspoon cumin
2 tablespoons chive

Heat large stock pot and cook the bacon until crispy. Sauté the corn and peppers in the bacon fat until translucent. Slurry the starch and chicken base with the water and add to the pot. Add all remaining ingredients but the chives and bring to a boil. Reduce heat to a simmer and cook slowly for about 35-45 minutes. Add chives and serve with a crusty warm French bread.

Crème Brulee

Preheat the oven to 325 F. - Place 16 oz. of Darifair's Daricream 31, vanilla bean and its pulp into a medium saucepan set over medium-high heat and bring to a boil. Remove from the heat, cover and allow to sit for 15 minutes. Remove the vanilla bean. In a medium bowl, whisk together 3 egg yolks and 1/2 cup sugar until well blended. Add the warm vanilla/cream blend slowly to the yolk/sugar blend with continuous agitation. Pour the liquid into ramekins (7-8 oz.). Place the ramekins in a large roasting type pan and pour enough hot water into the pan to come halfway up the sides of the ramekins. Bake the brulee just until it is set, approximately 40 to 45 minutes. Remove the Créme Brulee from the pan and refrigerate for at least two hours. Remove the Créme Brulee from the refrigerator and bring to room temperature, then cover the top evenly with fine sugar. Use a blow torch to melt the sugar until just caramelized - let it rest for about 5 minutes and serve.

Chocolate Ganache

Bring 10 oz. of Daricream 36 to a simmer, then whisk in 10 oz. of semi sweet chocolate chips until smooth. Remove from the heat and cool while occasionally stirring.
