Cake Donut Bread Puddin’ w/ Rum Sauce

1 stick unsalted butter
1 cup sugar
5 eggs slightly beaten
2 cups Darifair Heavy Cream
1 ½ tbsp. ground cinnamon
½ cup chopped pecans
1 tbsp. vanilla
16 cake donuts

Rum sauce:
4 tbsp. unsalted butter
½ powdered sugar
2 oz dark rum

Cream together the butter and sugar in a mixing bowl. Add eggs, heavy cream, cinnamon and vanilla and mix until smooth. Tear donuts into 1 inch pieces and layer into buttered baking dish. Pour cream and egg mixture over donuts and let soak for 5 to 10 minutes keeping the donut pieces submerged. Cover with foil and bake for 30 minutes at 350 degrees, remove foil and bake for an additional 10 minutes to brown.

To make the rum sauce, melt butter in sauce pan and take off heat. Add powdered sugar and rum to melted butter and whisk together. Serve a generous portion of bread pudding and ladle on 2 oz of rum sauce ….

Bavarian Crème

vanilla bean
1 1/4 cups heavy cream
1 tablespoon powdered gelatin
3 tablespoons milk
1/4 cup sugar
5 egg yolks
1 1/4 cups whipped cream

Pour the cream into a sauce pan. Then split the vanilla bean and scrape out the vanilla and add to the cream with the vanilla bean. Slowly bring the cream to a boil and remove from heat - set aside. Soak the gelatin in milk. Whisk the sugar with the egg yolks in a stainless steel bowl together. Remove the vanilla bean from the cream, add the soaked gelatin with the milk and slowly pour into the sugar yolk mixture. Place the bowl on a double boiler and whisk until the mixture coats the back of a spoon. Place the bowl in an ice bath until it reaches room temperature. Now fold in the whipped cream and pour mixture into 6 ounce ramekins. Refrigerate for 24 hours. Serve with fresh strawberries.
