Béchamel Sauce

3 tablespoons butter
2 small white onion, cut into 1/2-inch dice
Kosher salt
4 cup. all-purpose flour
4 cups milk
Pinch grated nutmeg

Heat a medium sized sauce pan. Place the butter and onion into the pan and cook slowly until translucent. Add the flour and cook until the flour and butter to light golden color for about 3 to 4 minutes. Warm the milk in a separate pot, then slowly whisk in the milk until incorporated. Add the salt and nutmeg. Slowly bring the milk/flour mixture to a boil, stirring frequently to prevent scorching on the bottom. Cook for about 15-20 minutes.

Foamy Hot Chocolate

1 tablespoon instant coffee
1/8 teaspoon vanilla extract
1 tablespoon sugar
8 oz. bittersweet chocolate
4 cups milk

Heat the chocolate in a sauce pan. When the chocolate starts to soften add one cup of the milk with the sugar, vanilla and coffee; whisk  thoroughly. Slowly add the remaining milk while continuously whisking to make the chocolate foamy. Serve in a mug and top off with Aerosol whipped topping and chocolate shavings.
