Bacon and Chive Cheese dip

1 quart Darifair Mac-n-Cheese base
½ cup chopped bacon
2 oz chopped chives
2 TBSP kosher salt
1 TBSP cracked bl. pepper
1 tsp. cayenne pepper
4 oz shredded cheddar cheese
1 oz modified starch (cook up)

In a separate bowl, mix together Mac-n-Cheese base, modified starch, salt, bl. Pepper, and cayenne and mix together. Add mixture to a double boiler and heat until temperature reaches 190 degrees and hold for 10 minutes Add chopped bacon, chives, and shredded cheddar cheese and gently blend in allowing the cheddar to melt and completely blend in. Remove from double boiler and immediately fill 8 oz cups and allow to cool then refrigerate.

Premium Mac N Cheese

For a 2# batch, mix 18.3 oz. of base sauce with 12.3 oz. of pre-cooked pasta and 1.4 oz. of shredded sharp cheddar cheese. Place the blend into a bake-able dish and cook for about 15 - 20 minutes.
