Cheddar & Bacon Mashed Potatoes
2.5 pounds Potatoes, Idaho peeled, 2”dice
1 tbs. Salt
8 oz. Darifair Mashed Potato Blend
4 oz. Cheese, cheddar aged sharp shred
2 oz. Bacon, crispy pieces
Put potatoes in a medium sized pot, cover with cold water, add the salt and bring to a boil. Cook the potatoes until fork tender. Strain the potatoes and place in a mixing bowl. Using a paddle on slow motion slowly adding the mashed potato blend. Do not overwhip! Add cheese and bacon and mix in until fully incorporated. Garnish with fresh sliced scallions.
Put 2.5 pounds of peeled and 2" diced Idaho potatoes into a large pot, add 1 tbs. salt and cover with water. Bring the potatoes to a boil over medium heat and cook until the potatoes are tender, about 20 minutes. Drain them well and transfer to a mixer. Using the dough paddle start mixing on slow and add gradually 8 oz. of Darifair's Mashed Potato Blend until fully incorporated.
