Blue Cheese Mashed Potatoes
16 oz. Potato Flakes, instant unflavored
8 oz. Darifair Mashed Potato Booster
8 oz. Water
4 oz. Blue Cheese Compound Butter
1 oz. scallions, sliced
Bring the water and potato booster in a medium sized pot to a boil. Turn off heat. Feather in the potato flakes and whip until fully incorporated. Add the Blue Cheese butter (temped to room temperature) and fold into the mashed potatoes. Garnish with fresh sliced scallions.
Instant Mashed Potatoes
Measure equal parts of water, Darifair's Potato Booster and "unflavored" Instant potatoes. Put the booster and water and bring to a boil, then reduce heat to a simmer and whisk in the instant potato flakes.
